We use a state of the art process to extract and preserve the oil from each olive while preserving it from oxidation thus yielding the highest quality premium oil possible.
  • Once at the mill, the olives are thoroughly washed
  • They are then crushed and transformed into a paste similar to tapenade
  • The resulting liquid is first filtered
  • Then passed into a centrifuge which by the difference in density between oil and water provides proper separation thus extracting pure oil
  • The oil is decanted for two to four weeks to allow for clarification
  • And finally bottled
